I love sesame flavoured bread, very soft and light but the best thing is that it is very easy to make when you think this recipe is from Michel Roux Jr collection. Eat the finished product with cheddar cheese and cider. Guarantee to wash away all the troubles in your life, at least while you are eating the bread.
Ingredients
15g yeast
250ml tepid water
250g fine semolina (finest possible)
250g white bread flour plus extra for dusting
1 tablespoon salt
100ml olive oil
1 free – range egg
2 tablespoon sesame seeds

Instructions
Dissolve the yeast in the 150ml of water
Then add semolina, flour, salt and oil
Mix to form a dough
If using the machine the knead on high speed for 5 minutes adding the rest of the water bit a time
If by hand then knead for 10 minutes adding the rest of the water
Until smooth and elastic
Cover and leave to rise in a warm place for an hour or until doubled in size
Knock the dough back, place it on a floured surface and shape it into 2 balls
Using a rolling pin, roll these out into circle of about 20cm across and 3cm thick
Place them on a baking sheet, cover and ,leave to double in size again
Preheat the oven to 220C electric oven / 200C fan oven.
Gently brush the dough with beaten egg and sprinkle with sesame seeds
